Baked Blueberry Oatmeal

This make ahead oatmeal is quick, delicious and the perfect on-the-go breakfast.  Made with CBD Honey to enhance the anti-inflammatory benefits along with the healthy fats in walnuts and antioxidants in the blueberries, this oatmeal powerhouse is also a great pre-workout snack.

1 1/2 cups oats

1/4 cup CBD Honey

1/8 teaspoon salt

1/2 teaspoon cinnamon

1 1/2 cups coconut, almond or hemp milk

1 teaspoon vanilla

1 cup fresh blueberries


1 tablespoon organic grass-fed butter or coconut oil

2 tablespoons brown sugar

1/4 cup oats

1/4 cup chopped walnuts


1Preheat oven to 325 F. Line the cups of a standard 12-cup muffin pan with muffin liners, and grease the papers.

2Stir together the oats, CBD Honey, salt and cinnamon in a mixing bowl.

3In a separate mixing bowl, whisk together the milk, egg and vanilla.

4Pour the milk and egg mixture into the oats and stir to combine. Set aside.

5Using your fingers or a fork, crumble the butter, brown sugar, oats and walnuts together. Set aside.

6Fill the cups of the muffin pan about three-quarters full. Top each one with 4-5 blueberries and about 1 tablespoon walnut topping.

7Bake for 25 minutes until golden. Let cool for 5-10 minutes, then remove from pan. Reheat in microwave when ready to eat and serve with CBD coconut oil.

Keep in refrigerator for up to 1 week.
