Hiker’s Trail Mix Cookies

High in healthy fats and complex carbohydrates makes this a great go-to for hiking and post-workout nutrition when calories need to be replenished. Use CBD infused coconut oil for added anti-inflammatory benefits.

1In a stand up mixer, using the paddle attachment mix together eggs, coconut oil, honey and brown sugar until well combined.
2Mix in whole wheat flour, baking soda, salt and oats until combined. Stir in sunflower seeds, dried cranberries, chocolate chips, coconut and almonds.
3Chill for 1 hour.
4Use a cookie scoop to scoop the dough into 2-3 tablespoon-sized portions. Bake at 350 F for 15 minutes or until golden brown.
Gluten Free Option: Replace 1 cup whole wheat flour with Bob's Red Mill 1:1 ratio gluten free flour
